Hello, my name is Lily Hwang. I’m a third year Grebelite who’s been associating since day one (OCR represent!). I enjoy cooking and my love of food goes beyond words. If I had the time, I would create a food blog. However, I do not – so recommending recipes is the next best thing.
If you like to cook and you want to try some new recipes, this article is for you. I found all the original recipes online, but after making them a few times, I like to stick to my version. Feel free to try them and let me know what you think. I have also attached a deliciousness and difficulty scale, in case you only have the energy to try one recipe.
Disclaimer: I am not liable for any kitchen fires, food wastage or food poisoning.
1. Butter Chicken
I made this for the associate progressive dinner and it was a huge hit.
Here is the recipe:
http://allrecipes.com/recipe/easy-indian-butter-chicken/
My alterations: Added about a cup of coconut milk; used 35% (whipping) cream, about ¼ less than the amount the recipe called for; used olive oil instead of vegetable oil; substituted margarine instead of butter #universitystudentbudget
Deliciousness: 8/10
Difficulty: 6/10 (If you don’t have to debone and de-skin the chicken like I did)
2. Scotch Eggs
I once tried this at an Irish pub and my life has never been the same. The first time I tried it, I had a deep fried version; however, when I decided to make this at home, I baked it instead. (Healthier and easier). Pairs very well with honey Dijon mustard.
Recipe:
http://allrecipes.com/recipe/scotch-eggs/
My alterations: Made my own pork sausage using ground pork (recipe here: http://allrecipes.com/recipe/breakfast-sausage); baked in muffin trays instead of frying; flipped eggs half way through baking; broiled the tops of the eggs
Deliciousness: 7.5/10
Difficulty: This is an 8/10 on the scale. Mostly because it is incredibly difficult to keep the ground pork to stay on the egg. Also easier if you use store bought sausage instead. Not to mention, it’s very messy if you choose to deep fry and do not have a deep fryer. Alternatively, I baked mine. However, didn’t taste as good as deep fried version.
3. Tuna Casserole
Probably my favourite casserole of all time. Every time I make this, my friends get a hoot and a holler out of canned tuna. My secret: Home-made mushroom soup makes this recipe awesome. It’s not very difficult to make, either!
Check out the mushroom soup recipe I used here: http://www.food.com/recipe/homemade-cream-of-mushroom-soup-264191
Tuna Casserole Recipe: http://allrecipes.com/recipe/best-tuna-casserole/
Modifications: Used regular macaroni noodles; homemade mushroom soup; and seasoned breadcrumbs instead of potato chips
Deliciousness: 8/10
Difficulty: 6.5/10 (Takes a while if you make the soup yourself)
4. Jalepeno dip
This is so simple you can make this as a midnight snack and have it ready by 12:05. Yes, this fantastic 5 minute dip gets the people going. I followed this recipe without making any changes. I did use pita chips instead of sourdough bread; however.
Recipe here: http://allrecipes.com/recipe/insanely-amazing-jalapeno-cheese-dip/
Deliciousness: 7.5/10
Difficulty: 2/10
5. Zoodles
The concept of zoodles (or zucchini linguini) puts a twist on pasta: substitute noodles for spiralized zucchini. Also works with spaghetti squash as well. Zoodles themselves are a great gluten free and paleo alternative. You will need a way to create the spiral shapes of the zucchini. You can attempt to use julienne peelers or knives, as spiralizers can be expensive. However, I recommend the spiralizers because it’s easier and safer.
Get the recipe here:
http://lexiscleankitchen.com/2014/07/11/healthy-food-friday-zucchini-roasted-garlic-chicken-and-veggie-primavera/
My alterations: Roasted the garlic open faced instead of covered in aluminum foil; Substituted with whatever veggies I had in the fridge
Deliciousness: 7/10
Difficulty: 7.5/10 (If you don’t have a spiralizer); 6/10 (If you do have a spiralizer)
6. Molten Lava Cakes
This is probably the best dessert I’ve ever made in my entire life. Can freeze the batter and just heat up whenever you’re feeling a craving
http://m.allrecipes.com/recipe/76935/molten-chocolate-cakes-with-sugar-coated-raspberries
Modifications: Baked in greased ramekins to make it look prettier (no further recipe changes)
Deliciousness: 9/10 (Takes a lot of accurate timing)
Difficulty: 8/10
